Summer tempters

I simply adore summer for the plethora of divine salads one may assemble.

But a diva can’t survive on grass, so potatoes are the perfect answer.

I can’t stop waxing lyrical about Bulgaria’s potatoes. Kartofki in Sofia are the best I have savored. It comes as no suprise that a staple summer salad for me is the classic potato. 6 years of cafe barista work in a French Boulangerie, during my numerous arts degrees has naturally entailed that my potato salad is more of the french variety.

So… get ready for dashings of Dijon, cornichons and prepare your tastebuds for a side of black caviar. This is the taste of summer in Sofia for me in my little apartment at the base of the mountain. Perfect carb and protein fuel for singing and easy to make in big batches so you save fuel cooking after long rehearsals. Savour and enjoy!

    I should mention, that caviar by the way, has a very high anti-inflammatory index. Although there are no known scientific reviews on its benefits for singers and tired/ inflamed vocal folds, why not eat it, just in case!
